Going alkaline vegan can be pretty tough, especially if you are a person who eats out a lot. Alkaline veganism became well known through Dr. Sebi. If you are familiar with him, he was a man who was curing different diseases from AIDS to cancer. His method was using an alkaline diet. A lot of foods that we eat causes inflammation in the body. Inflammation is the cause of disease. By eating foods that are alkaline, you are elevating your body to optimal health. This salad is not only extremely healthy, it is absolutely delicious. Alkaline Beet & Quinoa Salad
Recipe
Ingredients:
Serves 4

1 cup quinoa

2 small beets
-
4-5 key limes, juiced

1/2 red onion, diced

2 green onions, chopped

1 handful cilantro, chopped

1.5 tsp sea salt, or to liking

1 tsp onion powder
Note: you can add 1 tsp garlic powder if you are not on an alkaline diet.
Instructions:

Clean beets. Place a small pot of water to boil. Add beets and then bring to a simmer. Let cook until tender. About 20-40 min.

While beets are cooking, cook your quinoa. Bring 2 cups of water and 1/2 tsp of sea salt to boil. Add 1 cup of quinoa. Cover and lower to a simmer. Quinoa should be done around 15-20 min.

Once quinoa and beets are cooked and cooled, peel beets and dice them into small cubes. Add all ingredients to a large bowl. Mix and combine all ingredients, adding more sea salt if needed

Place in the fridge until chilled. Serve and enjoy!
